Ellis joined NTU in 2022, recruited by Head of Rugby David Ross after showcasing his talent at Brooksby Melton College. He quickly made his mark in the British Universities and Colleges Sport (BUCS) competition, earning a professional contract with Nottingham Rugby for the 2023/24 season.

His outstanding performances, which included winning both the players' and supporters’ player of the season awards, caught the attention of Llanelli Scarlets. Ellis signed a three-year deal with the United Rugby Championship (URC) side for the 2024/25 campaign, where he has since gone on to compete in both the league and the European Challenge Cup.
